Back in October I signed up to take part in The Great Food Blogger Cookie Swap. Over the past couple weeks over 22,000 cookies were shipped and consumed across the nation as part of this swap – that’s a lot of cookies!
I spent quite a few nights on Pintrest looking for the perfect cookie for the swap. After much consideration, I decided to put my own twist on these White Chocolate Peppermint Cookies.
My adjustments to the original recipe created Double Chocolate Chip Peppermint Oatmeal Cookies.
- 1 cup of butter (2 sticks at room temp)
- 3/4 cup of sugar
- 3/4 cup of brown sugar
- 1 large egg
- 1 1/2 tsp vanilla extract
- 2 1/2 cups whole wheat flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 1/4 cup rolled oats
- 1/2 cup white chocolate chips
- 1/2 cup semi-sweet chocolate chips
- 10 crushed peppermint candies (I put the candies in a Ziplock baggies and crushed with a wine bottle – use what you have)
Preheat oven to 325 degrees F
Cream together butter and both sugars. Add in the egg and vanilla, mix well. In a separate bowl combine flour, baking powder, baking soda, salt and crushed peppermint candies. Add the dry to wet. Lastly stir in oatmeal, white chips and semi-sweet chips. Scoop rounded balls on a baking sheet* and bake for 14 minutes or until edges are golden brown.
*Baking 101: If you don’t own a Silpat I highly recommend purchasing one! They are non stick baking sheets that have made baking the perfectly browned cookie a breeze!
A quick note about that butter: although I typically use “healthier” substitutes in baking (like applesauce for butter or oil), there are certain times (like the Holidays) when delicious indulgence is meant to be fully enjoyed.
Every bite had the perfect combination of white chocolate chips, semi-sweet chips and peppermint – white chocolate and semi-sweet chocolate were meant to be eaten together! I had to express extreme self-control and not eat the entire batch (or all the dough) before getting them in the mail to my swap matches!

I made Peppermint Snickerdoodles this past weekend, and while I love peppermint and snickerdoodles together they weren’t my favorite. I LOVE oatmeal cookies and have tried many different spins on it. This is going down for my baking list this weekend. Thank you so much!
Your cookies look very festive! And as for butter…well, I always make cookies with butter or margarine. I prefer my cookies to be decadent. Which is why I don’t bake cookies every day.
